Chef Perno On The Best Breakfast in Albuquerque

"I'm biased. I love our breakfast burritos at my restaurant, Campo. We put a confit chicken in it with green chile, and then we smother it in red and green chile and we serve it with local Bolita Beans, which is a smaller version of the Pinto Bean that tends to be a bit sweeter but still has a very robust flavor."

Chef Perno’s Favorite Dish at Campo

"I think one would be our Carne Adovada. It's a mainstay on a lot of the local menus. It's marinated red chile pork that sits for 24 to 48 hours in the marinade, and then we slow cook it for 5 to 6 hours. 

We cook it in Bow & Arrow Brewing Co. beer right now and in different aromatics, and we use the juices of the meat to braise itself, so it's self-braising with the red chile marinade."
